Meet Franco

Franco discovered his passion and love for cooking by watching his grandfather cook. He still has fond memories of his grandfather’s delicious barbecue that was grilled for the whole family, while growing up in Mendoza. As a kid, Franco could always be found in the kitchen observing his grandmother and aunt, trying to learn the art of their cooking. Today Franco is a professional chef and he has dedicated several years working in different kitchens. This only made him realize that teaching people how to cook and sharing his knowledge is what he truly loves! Franco combined this passion for cooking and teaching to start his own cooking studio. Apart from cooking and teaching, Franco enjoys traveling and his best travel memories are eating and cooking with local people. Franco has a lot of suggestions on non-touristy things to do around his city, so be sure to ask him his best off-the-beaten path recommendations.

“I love teaching how to cook and getting to know people from around the world, showing them how beautiful Argentina can be.”

What to expect

Please note menu might vary. If there are particular dishes you are interested in trying, please include your request in the booking form.

Cooking experience: (4-12 guests) Join Franco for a four-hour Buenos Aires cooking class in Palermo, a really interesting neighborhood for foodies, art enthusiasts, shopaholics and revelers alike. You a traditional Argentinean menu from scratch - Franco tells us that the dishes you will cook together are fond memories from Sunday cooking with family. He will welcome you with picada that includes traditional preserves and homemade bread, while you get to know each other and talk about Argentine culture, history and food. Then you will prepare chipás (Argentinian cheese bread) and empanadas (a crescent-shaped, savory pastry) together. You will learn how to make the dough from scratch, the filling and you will also learn how to make chimichurri sauce. After that learn to make humita in a pot with braised veal (corn, goat cheese and spices wrapped in a corn husk and slowly steamed). After you're done cooking, as part of the Argentinean tradition you will sit at the table and share the dishes you have cooked together, along with local wine. End your meal with a flamed dulce de leche crepes.

Notes: Franco can offer vegetarian and gluten free meals on request. Local wine is included in your experience.

PERSONALLY VETTED REVIEW
A Traveling Spoon ambassador visited this host. Here is their personal review.

If you like the idea of learning more about Argentinean food and, actually, learning how to prepare it, Franco’s house is the right place for you! He is really passionate about what he does and enjoys it. I was glad to hear and see someone so happy with his own city and country. The osobuco was amazing; he cooked it for several hours. Everything was marvelous, each dish had its own magic and the fact that we prepared it from scratch, makes it even better.
