Meet João

João is a fifth generation baker who grew up inside the food business. Born and raised in the countryside outside of Lisbon, João grew up inside the restaurant and then bakery that his parents ran. He first started baking seriously at the age of 13 with his family, and then went on to study hospitality and hotel management. Following in the footsteps of his parents, who own several bakeries and pastry shops around Lisbon. João recently opened his own pastry store, Nat'elier, that specializes in pastel de nata. Pastel de nata is an iconic Portuguese egg tart dessert famous in Lisbon and beyond, also known as Portuguese custard tart. At Nat'elier it is sold in its most traditional version, as well as a few new flavors (cheesecake, white chocolate and macadamia, oreo, and many more) and innovative versions such as vegan pastel de nata. Learn the secrets of how to make incredible traditional pastel de nata from scratch, including puff pastry!

What to expect

Please note menu might vary. If there are particular dishes you are interested in trying, please include your request in the booking form.

Cooking experience: (1-12 guests) Your pastel de nata masterclass will be hosted by bakery owner, João, and/or an equally wonderful professional pastry chef trained by Joao, such as chefs Silvia or Valeria. This traditional pastel de nata small group (non-private) cooking class will begin at a pastry shop in central Lisbon. Get dressed, donning an apron and hair net, and enter the professional kitchen where your pastel de nata masterclass will begin. After a brief introduction to the history of iconic pastel de nata, learn to make the puff pastry that is the base of this rich and delectable dessert. The chef will lead the puff pastry making process but you will also participate and be able to try some of the essential steps! Then learn to make the pastel de nata custard. This will be a collaborative effort with the custard being made jointly in one large cooking pot. After the custard is made, receive your own molds and learn how to shape the dough and fill the molds with your custard before they are baked. Each person will have the opportunity to make at least three of these bite-sized desserts. As you allow the tarts to cool, go back to the lovely café, enjoy a cup of coffee (or another hot or cold beverage of your choice), and finally get to try your perfect pastel de nata together! Recipes will be provided after the class (sent via email), so you can recreate these desserts at home.

Notes: Please note unlike the majority of Traveling Spoon's offerings, this experience is not private. It takes place in your host João’s pastry shop, and there may be other guests also participating in this experience (up to 12 pax). Only children above 8 years of age are allowed to participate in this experience, for safety reasons. If you request a private experience at a date or time of your preference, please get in touch and let us know - we'd be happy to arrange a wonderful experience for you and your group, at a different price!
