Kaushik’s job in the Indian Railways gave him the opportunity to travel often and that is when he developed his passion for food, cooking and meeting new people. He grew up in a typical Tamil Brahmin family and then married into a South Indian Madhwa Brahmin family, providing an ideal blend of cuisine from both cultures. Kaushik learned to cook from his mother and his wife. As an avid traveler and home-cook, Kaushik is excited to share his family recipes with travelers.

  • 1 big onion, finely chopped
  • 1 cucumber, cut into small cubes
  • 1 bell pepper, cut into small cubes (mix of red, yellow and green bell peppers)
  • 1/4 cup coriander leaves
  • 1 1/2 cup yoghurt
  • 1 tbsp cooking oil
  • 1 tsp mustard
  • 1 tsp cumin
  • 1 tsp white lentils (urad)
  • 1 tsp asafoetida
  • 1 cup basmati rice
  • 1 2-inch piece cinnamon stick
  • 3 cardamom
  • 1 or 2 onions, sliced length-wise
  • 1/2 cup tomato
  • 1/3 cup carrot, peeled and cut
  • 1/3 cup beans
  • 1/3 cup cauliflower florets
  • 1/2 cup mint leaves
  • 1/3 cup green peas ( soak in warm water for 10 minutes)
  • 3 tbsp ghee
  • 2 tsp red chili powder
  • 1 tsp turmeric powder
  • 2 tsp cumin seeds
  • 4 cloves
  • 1 bay leaf
  • 2 tsp ginger garlic paste
  • 1 tsp cardamom powder
  • 1 Thai green chili (can be increased to 2 or 3 depending on spice level preferred)
  • 1/2 cup yogurt
  • 1/3 almonds and cashews fried in ghee
  • Salt to taste
