Meet Brittney

Born and raised in Seattle and a University of Washington graduate, Brittney is a true Seattleite. She cares deeply about eating local food that is sustainably produced and is excited to share with you what makes Pacific Northwest cuisine unique. A graphic designer for 20 years, Brittney made a mid-career pivot to culinary and nutrition as it is something she has been passionate about since she was 12 years old. In fact, reading medical journals about nutrition is one of her favorite things to do! Brittney graduated from culinary school and is now a personal chef focused on cooking whole-food, plant-based cuisine that helps prevent diabetes and heart disease. Cooking experience: (2-4 guests) Meet your host Brittney at her beautifully designed condo in Seattle which has a view of Lake Union. Sip on a refreshing drink as your host shares stories about living in Seattle before joining her in her kitchen, a small but open contemporary space. During your Seattle cooking class, learn to cook a Pacific Northwest-inspired seasonal meal. As much as possible, Brittney uses fresh and local produce and seafood - using high-quality local ingredients is a priority. In fact, all her seafood from native salmon to black cod and shellfish is sourced from a local community-supported fishery (the only one in Washington) to ensure you eat high-quality, sustainably sourced seafood. During your hands-on cooking class, learn to prepare and cook fish, create a delicious salad, and hone the techniques involved in creating a puree or sauce that accompanies your fish. You will learn to cook three dishes from scratch during your cooking lesson which lasts about 1.5 hours. After cooking, sit down at the table to share the fresh, seasonal meal you helped prepare with Brittney. Enjoy your meal over wine or beer. Your menu might be influenced by Mediterranean or Asian flavors and include dishes such as cabbage and carrot slaw with a ginger soy vinaigrette, a furikake-crusted black cod caught off the Washington coast, and a miso parnship puree or parchment-poached salmon with chimichurri, and lemon and spinach quinoa salad served with grilled artisanal sourdough bread. Your meal concludes with a dessert such as an apple and blackberry tart, poached ginger pear or homemade honey lavender almond ice cream.

A culinary experience at Brittney's is not to be missed in Seattle! It is a unique treat to meet and learn from a chef passionate about the regional bounty in her beautifully decorated home! Brittney is a wealth of knowledge about local and sustainable Pacific Northwest ingredients as well as the area. She prepared a thoughtful and delicious fine dining meal that included furikake-crusted black cod, brown rice with shiitake mushrooms and a most delightful miso parsnip puree that left me wanting more...and I had to go in for seconds! It made me feel so good that the fish we ate was a sustainably caught local fish (caught the day before!) and that the meal was dairy free. Not to mention that the black cod we prepared was one of the most velvety, succulent bites of fish I had ever tasted. I feel like I finally learned how to cook fish the right way and hope to recreate it soon. The door and passage way to enter Brittney's building is a bit run down but as soon as you enter her home you are transported to a place where you feel welcomed and when you cook with her, you truly understand the culture and terroir of the Pacific Northwest!

Brittney was amazing host to me and my friend. She taught us Knife techniques that I didn’t learn in Culinary. I brought my old classmate that I haven’t seen since 1997. This Chef experience set a positive precedent because it helped set the stage for stronger friendship relationship.I would definitely recommend the Chef experience to anyone that is trying propose to someone,first date,or person that is not into social interaction.

Brittney is an expert chef and I was extremely happy to have been able to learn from her. Would recommend for all experience levels. Brittney also chose great ingredients and taught us how to select them ourselves. We were taught to cook halibut with an amazing chimmichurri sauce and more.

It was fun. But where do I start? I loved getting to help prepare the meal. Brittney is a great host, and talk about the view! Little sea planes taking off and landing on Lake Union. The menu was Pacific Northwest classic with a Japanese twist. Amazing food. Five stars.

Traveling Spoon connects you with meaningful culinary experiences, from private cooking lessons to homecooked meals in people's homes. Enjoy an immersive cultural experience that gives you a glimpse into the local way of life.

FAQ

    You can cancel your reservation up until 48 hours before your experience for a full refund minus a 3% processing fee. Experiences within 48 hours are not refundable.

    If you have a question for your host, you can include a note in the field "Write a note to your host" during the booking process. Once your booking is confirmed, you will be emailed your host's direct contact information and you will also be able to message the host through your profile. You can always cancel your booking and receive a full refund 48 hours or more before your experience. If you have other questions you can also email us at reservations@travelingspoon.com.

    Most of our hosts are able to accommodate dietary restrictions and allergies, including vegetarian and gluten free options. For vegetarian travelers, we have an icon on each host profile to indicate whether that host can also offer a fully vegetarian menu. There is a section in the booking form to note any allergies or dietary restrictions which will be sent directly to your host.

    Some hosts offer alcohol as an optional add-on for travelers who are of legal drinking age. Pricing for alcohol is visible on the host profile page and includes one to two glasses of wine, beer or local alcohol.

    Have a flight or other tour planned and can’t make the timing provided? If the timing listed on the host’s profile doesn’t work for you, our hosts can often accommodate timing changes. Because all of our experiences are private our hosts are happy to tailor experiences to meet your travel needs. Simply note your request in the booking process.

    Your card will not be charged until your host accepts your booking. Typically hosts respond to bookings within 72 hours. In the event your host is unavailable on your selected date and your host rejects your booking your credit card will not be charged.

    Your host's detailed contact information, including their phone number, address, and direction notes, will all be provided immediately upon successful confirmation of your experience (after your hosts accepts your booking and your credit card is successfully processed). This information will be emailed to you to the email address you used to sign up, and will also be visible on your Traveling Spoon profile.

    All prices are noted per person prices unless otherwise specified. Transportation is typically charged on a per car basis. Children aged 5-11 are 50% off, and infants aged 0-4 are free. Hosts set their own prices and Traveling Spoon marks up the experiences; on average hosts receive over 70% of the price paid by the traveler.

    100% of Traveling Spoon experiences are private! Just you and your host and host’s family.

    Hosts typically respond to booking inquiries within 72 hours. If for some reason you have not heard from your host or if you have any questions you can always contact us at reservations@travelingspoon.com.

    Your safety and security are our top priority. To ensure this, Traveling Spoon personally vets 100% of all hosts, including an in-person host visit, to ensure each host and experience meets our strict quality requirements.

    Some hosts offer transportation as an optional add-on for travelers. Typically this is round trip transportation with pick up and drop off at your hotel. Pricing is quoted per car. Specific instructions for transportation will be provided in your confirmation details when your booking is confirmed.

    Many of our hosts accommodate solo travelers. You can see if a host accepts solo travelers by looking at the traveler range found next to the experience descriptions on the host profile (indicated by the numbers in parentheses next to "In-home meal", "Cooking experience" and "Market visit").

    Most of our Traveling Spoon experiences are incredibly family friendly and can accommodate infants and children. If a host is unable to accommodate children that will be noted in the “Notes” section of their profile. Our child pricing policy is children aged 5-11 are 50% off, and infants aged 0-4 are free.
