Meet Tony

Tony is a warm and gracious host who loves cooking because he loves to eat! A Johnson and Wales trained chef, Tony was born and raised in San Juan. After spending many years in New York, he decided to return to his home country to share his Puerto Rican food, culture and the beauty of the historic home he owns. Tony hosts at his B&B, an architectural gem exquisitely decorated in the center of San German built in 1912 and close to beaches, hikes, and other attractions in the southwest of Puerto Rico. An experience with this charming and talented Puerto Rican chef is a treat!

What to expect

Please note menu might vary. If there are particular dishes you are interested in trying, please include your request in the booking form.

Cooking experience: (2-6 guests) Begin your Puerto Rican culinary journey with a cocktail and a tour of Tony's Victorian Creole home (and B&B). What makes Tony's home special are the walls adorned with original art nouveau paintings from 1912. It might be the only home in the region with original paintings from handmade stencils on wood. Next, join Tony in the kitchen for your Puerto Rican cooking class with a modern twist on traditional Puerto Rican cuisine. You will learn to cook three seasonal Puerto Rican dishes with locally sourced ingredients from Tony's garden or the local markets. Some of the dishes you might learn to cook are traditional rice fritters with a creative guava sauce or chayote escabeche, a local squash packed with antioxidants marinated in citrus and olive oil. After cooking, enjoy your meal on the terrace with a view of the garden (weather permitting) or at the main dining area with a glass of sangria or beer. Please note that your meal may be supplemented with additional dishes that Tony has prepared in advance.

Notes: A carafe of sangria or beer is included in the cost of your experience. Whenever possible, Tony prefers hosting evening experiences as he is typically busy with his B&B guests in the mornings.

Languages spoken: English, Spanish

An absolute must do on any trip to PR. Tony was amazing- not only is his house in San Germán a historical gem, but the food we made was absolutely perfect. Couldn’t get any more authentic. Plus he filled with knowledge of the history of the island. One of our favorite vacation experiences for sure. Oh and be sure to vote for him in the election he will save PR!

We loved learning the history of the food, the house, and the island. We loved hearing his family stories as we cooked some of his traditional meals. He served us at the end and let us enjoy the space and food. Tony was VERY hospitable and the food was DELICIOUS!

Absolutely amazing Experience! This is what my husband and I like to do whenever we travel, cook with a local. We spoke with Tony a few days beforehand and he offered us the option to do it as a cooking class or for him to do the cooking and serve us. We definitely wanted to be hands on. He was extremely flexible with the menu options. We wanted to learn local cuisine and he and came up with an excellent menu for us to make together. He was prepared when we arrived and we got right into making food! He was so friendly telling stories, cracking jokes, and making sure we were doing ok. We got distracted at times and so it ended up taking longer than expected but we were prepared to spend all day there and we had so much fun the time flew by! When we were done cooking, he served us on his beautiful patio. We also got the chance to chat and then took a tour of his bed and breakfast that he runs in this beautiful unique historic building. I loved our time with Tony and would definitely recommend this as a must do for a lot of our friends and family. So down to earth, such a sweet palce, and easily our favorite thing we've done in puerto rico! Also the best local food we have had here too! What to expect: - No A/C, it will be hot - No set schedule, do yourself a favor and don't have somewhere to be afterwards so you can relax and enjoy the experience - This isn't a super structured class with a written down recipe. This is part of why I loved it, because using the memory of a recipe as a suggestion is how I like to cook. I did make sure to take notes though. Local foods we made: - chaote shrimp salad - almojábanas (fried dough balls) - mofongo - cod in a sofrito onion tomato sauce - fried pork - arroz y habichuelas (rice & beans) - coconut & mango tembleque (like panna cotta) Everything was delicious!

One of the true highlights of my trip. Chef Tony was incredibly generous with his time, friendship, and home. He was super flexible with the itinerary. The home is a piece of beautiful history and the downtown plaza of San German was just a block away. Do this for an authentic meal and wonderful experience.

Chef Tony is EXCELLENT ! We booked this experience for our daughter's birthday and the whole event was AMAZING ! From the minute we met him, Chef Tony was completely engaged, made sure we were safe in his restaurant-level kitchen AND had FUN all at the same time ! Chef Tony customized the menu to foods that she loves, including fresh fruit, rice, plantains (made into pinones), salad, sushi, pork as main course and tembleques (pudding-like) for dessert, and was willing to customize the experience on the spot if we wanted last-minute changes. He showed us his B and B "mansion" with great pride and joy. We loved his chatter as well as his friendly way while we were preparing the food. Would ABSOLUTELY and POSITIVELY recommend this experience !! The food was fresh and SO, SO, SO tasty ! THANKS Chef Tony !
