Born in Mérida, Sofia delights in preparing local Yucatecan and Mayan dishes that showcase the cultural heritage of the Yucatán Peninsula. An accomplished home-cook, Sofia learned to cook from her mother and grandmother and says the talent runs in the family. Yucatecan cuisine has been influenced by a variety of cultures, from the indigenous Mayan people, to the Spanish colonizers, to the Dutch and Lebanese who migrated to the region. Sofia prepares traditional Yucatecan dishes such as sopa de lima (a light and refreshing, traditional chicken soup accented with lime), panuchos (black bean filled tostadas), sikil pak con tostadas (traditional dip made from ground pumpkin seeds, served with tortilla chips) and Yucatecan tamales wrapped in banana leaves. Sofia loves sharing her Yucatecan culture through food and conversation and says "I love teaching my guests to cook as each one of them takes a bit of my heart with them but they also leave a bit of theirs!”

4 fresh limes, juiced
1 fresh lime, quartered for garnish
1 onion, sliced
1 green bell pepper, sliced
3-4 dried bay leaves
3 tsp oregano
6 black peppercorns
2 cubes chicken bouillon or about 4 cups chicken broth
"I loved my class. My son bought me a gift card for Christmas and I wanted to share the meal with him. I was able to make a wonderful Father’s Day dinner for him, my husband and my father in law. Sofia was wonderful. She was very kind and helpful. I guess it was also Father’s Day in Mexico, so she took the time from her family to help me make a delicious meal for my family. The meal was very fun to make and the food was delicious. It was the perfect dish on a hot summer day. I plan to make the taco de pastor for my family again. "Sofia is fantastic! My partner and I took her tacos al pastor class and really enjoyed it. The food we made was fantastic, and the class was well-paced. We also asked her to make tortillas with us, and she spent a lot of time helping us troubleshoot and get it working on our specific stove. I would highly recommend her as an instructor!"
