Your host Alice
Alice is excited to teach guests all about fermentation during your online fermentation class! Alice is a cooking teacher at a London school, as well as a private chef, with 15+ years of experience. She started her career at Jamie Oliver's Cookery School before moving to LA, where she fell in love with healthy Californian cuisine! She cooks vegetarian and vegan meals using fresh and seasonal produce. A trip to a local market or grocery to buy fresh ingredients is her favorite thing to do. Alice loves meeting new people and she believes that cooking with someone is the best way to get to know them and learn about their culture.

5-6 fresh lemons
¼ - ½ cup salt
½ cup fresh lemon juice
1 cinnamon stick (optional)
1 small head organic Napa (Chinese) cabbage
2 tsp sea salt
1 tbsp fresh garlic, minced
1 tbsp spring onions, chopped
1 tbsp fresh ginger, finely chopped
1 ½ tsp Korean red chilli powder (gochugaru)
1-3 tbsp water
Carrots, turnips, radishes, apples, red cabbage and/or beetroot, sliced (optional)
