A warm and fun host, Tina, a mother of seven is passionate about cooking and sharing traditional Georgian recipes that have been passed down through generations in her family. She sells her famous wraps and crepes at the Tbilisi flea market. Her activities allow her to meet new people and enable her to constantly learn new things. With Tina, you will experience Georgian cuisine - a melting pot of a variety of flavors and new ingredients that you may never have tasted before. Learn to make khinkali, brothy, spiced-meat (and vegetable) filled dumplings, considered a national dish of Georgia. Dinner parties in Georgia are never complete without a plate of steaming hot khinkali! Tina enjoys meeting people from around the world, learning about different cultures and sharing the rich food traditions of her country Georgia.

  • 4 cups (1/2 kg) all-purpose flour
  • 1/2 tsp salt
  • 2 cups water (as needed)
  • 1 lb ground beef
  • 1/4 lb ground pork (optional - can be added if beef is not fatty enough)
  • 2 medium yellow onions, finely chopped
  • 1/2 tsp ground cumin
  • 1/2 tsp crushed red pepper, or to taste
  • 1/2 tsp freshly ground black pepper, plus more for serving
  • A few sprigs of fresh cilantro, chopped
  • 1 potato, boiled and smashed
  • 1/2 cup mushrooms, chopped
  • 1 tbsp butter
  • Salt to taste

"We made khinkalis with Tina and it was a delightful experience! We made both vegetarian and chicken version, both unique flavors and so good. Tina was very engaging, conversational and we really felt like part of her family. She was patient with us as we were a bit slower on rolling out the dough and walked us through the process. We had such a great time!!"

"Tina was absolutely delightful. Her English is excellent (fortunately since none of us speak Georgian) and she has a relaxed and friendly manner that allowed for a flowing conversation while still giving careful and attentive cooking instructions. Although the video quality wasn't excellent, Tina easily looked at our work and provided feedback. She accurately judged the pliability of my dough just by seeing how it hung when I held it up to the camera. And was spot on about the consistency of my filling even with my bowl off in the distance. I never felt like I was cooking alone."

"Our family joined Tina online to make Georgian dumplings one early Saturday morning. Making dumplings takes time. It requires proper kneading and patience and waiting for the dough to be the right consistency to achieve dumpling perfection. But the two hours flew by. During those moments between dumpling instruction, Tina introduced us to her family and her sweet dog. With her daughter manning the camera, Tina walked us through her home and property. We saw her garden and the river just below her house. We learned about the Georgian language and alphabet and folk music and dancing. Ultimately the dumpling instructions were easy to follow and our dumplings were in fact delicious (but next time I must roll the dough a bit thinner to match Tina's). But we also made friends whom we hope to meet in person one day."
