Your host Gabriela
Gabriela first learned to cook from her aunt and grandparents. Her grandparents, who were of Spanish origin and came to Argentina as teenagers escaping the war, owned a pasta shop where they produced ravioli, agnolotti, and a variety of other fresh pastas. Gabriela grew up in the La Boca neighborhood of Buenos Aires, famous for its artist community, and her grandparents (also artists themselves) sold pasta to all the artists of the neighborhood. Gabriela is excited to share a special Christmas menu and teach you to cook dishes her family makes, such as vitel tone, a classic Christmas Argentinian dish originally from Italy, which consists of veal slathered with an anchovy and tuna-based creamy sauce and pan dulce, a sweet bread that is an emblematic food for the holidays.

  • 3 lb. peceto, beef or veal round steak, roast eye of round
  • 2 cups (500ml) white wine
  • 2 tbsp olive oil
  • 1/4 tsp salt and pepper
  • 1/2 tsp rosemary
  • 1 tbsp mustard
  • 1 can tuna (natural or oil)
  • 1 cup olive oil
  • 2 tablespoons mustard
  • 1 anchovy
  • 1 cup mayonnaise
  • Juice of ½ lemon
  • 2 tablespoons capers
  • Salt and black pepper, as per taste
  • 1 tbsp sugar
  • 1 tbsp active dry yeast
  • 1/2 cup water (lukewarm)
  • 2 tbsp butter
  • 1/3 cup sugar (powdered)
  • 2 eggs (at room temperature, beaten) or 1/4 cup cooked squash
  • 1 tsp salt
  • 3 1/2 cups flour
  • Lemon juice of 1 lemon
  • 1 tsp cognac
  • 1 tsp azahar (orange blossom water)
  • 1 tsp vanilla essence
  • 3/4 cup dry fruits
  • 1 egg for egg wash

"I had the best time learning how to make empanadas with Gabriela!! She popped up on screen in a chef's hat and apron with a beautiful table display of prepped ingredients. Gabriela did not cut any corners for the online experience, I couldn't believe how lovely she made the presentation. She was so friendly and welcoming, she shared stories of her family history and how she came to love cooking. I felt right at home. I had made empanadas before, but Gabriela taught me so many tips and tricks I had never tried before. The way she made the dough, the way she handled the dough, the way she closed up each empanada, and taught me different methods... it was a delight to watch her obvious expertise, and she celebrated every small win I had along the way. She also did the lesson half in English half in Spanish because I have traveled to Buenos Aires before and love speaking Spanish, so I learned some new cooking vocabulary as a bonus. Such a wonderful lesson!!"
