Tony is a warm and gracious host who loves cooking because he loves to eat! A Johnson and Wales trained chef, Tony was born and raised in San Juan. After spending many years in New York, he decided to return to his home country to share his Puerto Rican food, culture and the beauty of the historic home he owns. Tony hosts at his B&B, an architectural gem exquisitely decorated, in the center of San German, built in 1912, it is close to beaches, hikes, and other attractions in the southwest of Puerto Rico. An experience with this charming and talented Puerto Rican chef is a treat!

Cooking experience: (2-6 guests) Enjoy a Puerto Rican cooking class in the heart of San Germán. Begin your culinary experience with a cocktail and a tour of Tony's Victorian Creole home (and B&B). What makes Tony's home special are the walls adorned with original art nouveau paintings from 1912. It might be the only home in the region with original paintings from handmade stencils on wood. Next, join Tony in the kitchen for your Puerto Rican cooking class with a modern twist on traditional Puerto Rican cuisine. You will learn to cook three seasonal Puerto Rican dishes with locally sourced ingredients from Tony's garden or the local markets. Some of the dishes you might learn to cook are traditional rice fritters with a creative guava sauce or chayote escabeche, a local squash packed with antioxidants marinated in citrus and olive oil. After cooking, enjoy your meal on the terrace with a view of the garden (weather permitting) or at the main dining area with a glass of sangria or beer. Please note that your meal may be supplemented with additional dishes that Tony has prepared in advance.

This cooking class in San Germán is honestly one of those experiences you keep thinking about long after it’s over. It feels less like a class and more like being welcomed into someone’s home, which makes sense since it’s set in this gorgeous historic house full of character and charm. Tony, who is both the cooking instructor and the owner of the bed and breakfast where the class takes place, really makes the whole experience. He has this easygoing, welcoming style that instantly puts everyone at ease. You can tell he genuinely loves what he does. One thing that really stood out is how he asks about your food preferences ahead of time and actually builds the menu with you, which makes the whole experience feel personal right from the start. He explains everything clearly without making it feel technical or overwhelming, and he mixes in stories about Puerto Rican food and culture that make it all feel more meaningful. You’re not just following a recipe, you actually understand what you’re making. The food is incredible. Everything is fresh, flavorful, and just feels thoughtfully put together. There’s a great mix of traditional Puerto Rican dishes and modern touches, so it stays interesting the whole time. And sitting down to enjoy everything at the end together is easily one of the best parts. The setting really pushes it over the top. Being in a historic home that also doubles as his bed and breakfast makes it feel intimate and authentic in a way a typical cooking class just can’t match. This was the highlight of our trip to Puerto Rico! Tony was great. He asked why I would like to cook and of course I had to choose alcalpurrias& tembleque. He also showed us how to make arroz blanco con habichuelas y caldo de cerdo. Everything tasted great!! I love cooking and I can’t wait to make this for my friends and family! Tony shared so much history and information. He was funny and entertaining. His bed and breakfast is beautiful and historic. We ate on the patio and it was so cute! Everything was so great and so much more than I expected! When we come back to Puerto Rico I would love to take another class. Hands on is so much better than just looking at a recipe! I HD to give myself props because I already knew how to make achiote oil and sofrito but I learned so much. My husband also loved it. He helped cut the plantains and the root and we both made the alcalpurrias. It was definitely an amazing experience and my favorite part of Puerto Rico!- dana April 08, 2026
