Sri Lankan food is a blend of spices, flavors and colors and Buddhima is delighted to share her passion for Sri Lankan cuisine with people visiting her beautiful country. Buddhima is someone who is constantly learning new things and the same goes for her cooking as well - she is always learning and experimenting with dishes to evolve her culinary repertoire.

  • 0.5 lb. (300g) chicken (preferred with bones or then boneless is fine too)
  • 1 tsp chili powder
  • 1/2 tsp turmeric powder
  • 2 large onions
  • 1 garlic bulb
  • 1/2-inch piece of ginger
  • 1 tbsp curry powder
  • Juice of half a lime
  • 1 tomato
  • 1 sprig of curry leaves
  • 1 pandan leaf (can also use lemon grass/coriander/bay leaf as a substitute)
  • 3 or 4 cloves
  • 1-inch piece of cinnamon
  • 2 or 3 cardamom
  • Coconut oil to temper
  • ½ cup coconut milk
  • 3 cups of flour (wheat or all-purpose flour)
  • 2 cups shredded coconut
  • 1/3 cup grated carrots
  • 1/3 cup leaks/spring onions/spinach
  • Salt to taste
