Get transported to Catalonia as you experience the food and culture of the region with your host Josh who is a wealth of knowledge about Spanish tapas, delicious small plates that are served at almost every bar and restaurant in Spain. Josh grew up in Portland, Oregon and moved to Spain in 2002 to improve his Spanish. He ended up moving there permanently because he fell in love with the country's language and culture. He translated and interpreted for a while before realizing his passion for food. Josh first started cooking in his childhood, exploring spices and different ingredients. He then learned about different ways of cooking in Spain and appreciated relying on quality of ingredients to make amazing flavors. He loved the shift from depending on spices to using time and careful preparation of the best, freshest ingredients to create incredible meals. He loves the variety of fresh seafood available in Spain and learned from friends' grandmothers and fathers their favorite family recipes. Josh opened up a cooking studio a few years ago to teach travelers about the region's amazing ingredients and to communicate what he loves about the area's local history and food culture through a shared food experience. Josh is also a percussionist in band and he will be happy to share his favorite local music recommendations (and even play them on the sound system)!

What will you cook together
  • Pamtomaquet con jamon, Catalan toasted garlicky bread with tomato and ham (alternatively, you can learn to make gambas al ajillo, garlicky shrimp and your class will be 60 minutes long)
  • White wine sangria, a popular Iberian beverage made with white wine and chopped fruit (or red wine sangria if you prefer)

  • 1/2 loaf country style white bread, sliced
  • 2 ripe tomatoes
  • 1 clove garlic, unpeeled, sliced in half
  • 1/4lb thinly sliced Spanish serrano ham or an alternative such as prosciutto di Parma or Black Forest ham
  • Extra virgin olive oil
  • Salt to taste
  • 1 apple, thinly sliced
  • 2 oranges, 1 sliced and 1 juiced
  • 1 lemon, sliced
  • 1 stick cinnamon
  • 1 peach, thinly sliced
  • 1 kiwi, thinly sliced
  • 1 tbsp sugar
  • 3 shots liquor (rum, brandy or vodka)
  • 1 bottle white wine
  • 1 small bottle lemon soda or club soda
  • Ice cubes

"Josh’s class on Tapas and Sangria was fun and a wonderful way to “travel” to Barcelona from our kitchens. He made it a joy to prepare the dishes and we are so tired of cooking (right now). His 2 camera system was great! We were able to easily follow each step of his cooking. I had my doubts about Crema Catalana but his encouragement and tips along the way bolstered my confidence. It turned out delicious! Josh was very knowledgeable about Spain and you could tell his love for the food. He sprinkled in stories about Spain and the food as we cooked so we really learned a lot while having fun. We would definitely book another class with Josh."

"We had a fantastic experience with Josh! My mom, sister, and I couldn't get together for the holidays due to COVID, so we decided to do a remote cooking class together. It was FANTASTIC! Josh was an incredible host, and we had a blast. He was easy to follow and we learned a lot but had fun along the way. I never thought I would make seafood paella! "We had scheduled a class with Josh for my dad's socially distant 70th birthday party. Josh and the Traveling Spoon team were very communicative beforehand. It was easy to share the recipe, Zoom link, and directions with our family and friends who were going to join the call. Josh was friendly, funny, and very knowledgeable. Though our group was a bit loud and many participants didn't know how to use 'mute,' Josh was still able to manage and lead us all through the recipe. Our group had a great time! My family and friends raved about the experience and recipe! We appreciated how Josh lead us through all the steps and checked on each person's dish through the camera to give advice and feedback. The meal was delicious!"

"The class was great. Josh took time beforehand to understand our access to ingredients and kitchen set up prior to the class. He tweaked the menu to meet our needs. He was a great teacher and we all learned a lot. The tapas we made was wonderful and as a final touch, Josh shared a Spotify paly list of Spanish music that we could enjoy will eating our food and drinking sangria. Highly recommend!"
