Julia has been cooking her whole life, ever since she was a young child living in NYC. Cooking is her first love and the thing that brings her the most joy! Gumbo is one of her all-time favorite dishes and she is excited to teach guests how to make this hearty and comforting stew that originated in Louisiana. Julia believes everyone can cook well and loves showing people how to cook. If food is Julia's first love, people are her second. There is nothing that brings her more satisfaction than hosting and cooking for people. A technology marketer by profession, Julia is very excited to teach guests how to make her signature gumbo from scratch.

4-6 (2 lbs) bone-in, skin-on, chicken thighs
1 package smoked andouille sausage, sliced
2 ½ tbsp paprika
2 tbsp salt
2 tbsp garlic powder
1 tbsp black pepper
1 tbsp onion powder
1 tbsp cayenne pepper (or less, depending on how spicy you like your food)
1 tbsp dried oregano
1 tbsp dried thyme
2 red bell peppers, chopped
2-3 stalks celery, chopped
1 large onion, chopped
4 cloves garlic, chopped
3 sprigs fresh thyme
2 large bay leaves
1 cup vegetable oil (or any oil that can handle high heat), plus two tablespoons
