Chiara is excited to teach guests how to make a savory chicken or veal marsala and pasta sauce from scratch! Chiara has always loved to cook ever since she was a child. When she was young she learned from her mother and grandmother, and then later from culinary school which she attended to further her cooking education and passion. A Roman native, Chiara specializes in traditional regional dishes and is keen on sharing her favorite family recipes. Chiara comes from a family that enjoys cooking together and can often be found in the kitchen rustling up a delicious meal with her children. Chiara is multi-lingual and speaks English, French and Italian, so if you are interested in an experience in another language please note this in your booking!

  • ½ lb chicken escalopes or veal or pork escalopes
  • 1 tbsp flour
  • 1 tbsp extra virgin olive oil
  • 1 tbsp butter
  • 2 tbsp Marsala dry wine
  • 2 oz heavy cream
  • 10-12 fresh small tomatoes (cherry, grape or other)
  • 2 garlic cloves
  • Choice of red hot chilli peppers
  • 5 tbsp extra virgin olive oil
  • 1 cup Parmigiano Reggiano cheese, grated
  • 10 fresh basil leaves
  • Salt to taste
  • Store bought pasta of choice to go with your homemade sauce
